of Jerk Sauce
The
Jerk-style of cooking was first introduced
to Jamaica over 300 years ago by the slaves
brought to Jamaica from Africa.
Jamaica
was a British Colony and the richest of
all the Caribbean Islands. It was the
crown jewel for the King and his wealthy
friends. Jamaica was also the major drop-off
port for fresh supply of slaves. The British
being the largest slave traders in the
region made sure that the plantations
were fully stocked with able bodied men
and women to ensure the steady supply
of sugar, coffee, cocoa, pimento, and
other produce for the British merchants.
Jamaica
was fortunate to receive the most aggressive
warrior-like and rebellious slaves in
the Caribbean. Naturally their rebellious
outburst was met with full opposition
from the overlords and the government.
The
British were well known for their barbaric
methods of punishment. The most inhumane
treatment was implemented to break the
will and resilience of those proud people
who were not slaves in their homeland,
but free people who were themselves rulers,
Kings, Queens, Princes, Land Owners and
Business People. Now they are relegated
to slavery which is not acceptable.
Therefore,
every effort to punish and to break their
will into submission was met with bloody
vengeance killings of their overlords,
their families, and the burning of both
their homes and plantations. At every
opportunity the slaves would [RUN] attempt
to escape often without success.
One
particular group of slaves known as the
Maroons were quite resilient and methodical
in planning their escape and survival,
in spite of being strangers to the area.
Many [RUNNERS] found themselves in what’s
known as the “COCKPIT MOUNTAIN RANGE”.
No one lived there because of the topography
,rough limestone, razor sharp rocks, caves,
and extremely difficult to navigate. The
caves become homes for the Maroon escapees.
They were committed to live and the Cockpit
Mountains will be their new home.
The
slave masters had specially trained dogs
to hunt, find and kill the RUNNERS. The
runaways become very skilled in the art
of beating the British and their rich
plantation owners at their own game. The
dogs that were sent to hunt and kill the
escapees were cough and befriended, retrained
to kill their masters.
The
Maroons rage bloody war on the masters
lives, homes and property which became
extremely burdensome and dangerous to
the economy of the rich plantation owners,
merchants and the British Royalty. The
wars of the Maroons were so effective
that the king of England under pressure
from his rich land owners issued a proclamation
which pardoned and gave these brave Maroons
total freedom and autonomy. Full rights
to the Cockpit Mountain Community with
power to manage it’s own affair
as a nation within the nation of Jamaica.
The
Maroons are responsible for introducing
their unique and delicious JERK STYLE
of cooking to Jamaica. While on the run
they would take with them their special
and unique seasoning that is hot, spicy,
salty and delicious. The slave would hunt
wild-game while on the run, cook a portion
and saturate the uncooked balance with
the Jerk Seasoning which also cures the
meat preventing spoilage.
Jerking
is cooking meats over an open pit dug
in the ground [Barbeque] and the wood
of choice is called pimento. Jerking occur
when the burning wood is poked with jerking
movements to hasten the cooking process.
The jerking actions exposed the cinders
which produce more intense heat that speed
up the process while the slave keeps vigilant
watch looking everywhere for fear of being
caught.
Jerking
is deeply embedded into Jamaica’s
Culinary Culture, a tradition that started
over 300 years ago by some very unique
Africans… our Maroons. Jerking is
now a Jamaican national treasure.

Grandpa
Eddie arrived in the United States with
his young Jamaican family in the winter
of 1968. Soon after, he began his personal
quest to create his own unique line of
sauce and seasoning.
Grandpa
tested dozens of varied formulas before
finally deciding on "THE ONE"
that met exacting specification. He tested
his unique sauces on family members, friends
and co-workers as far away as London England.
Finally, after twenty eight years of giving
away his delicious sauce he decided it
is time to market it to the public.

Eddie's Gourmet Jerk Sauce and Gourmet
Barbeque Hot Sauce is full of all the
right stuff, Allspice, Nutmeg, Cinnamon,
Ginger, Onion, Garlic, Black Pepper, Olive
Oil, Hot Peppers, Thyme, Cane Sugar, Vinegar,
and other spices. Sun-ripe Tomatoes, Hot
Peppers, Oregano, Onion, Garlic, Basil,
Thyme, Ginger, Cane Sugar, Olive Oil,
Molasses, and other spices.
Because
Grandpa Eddie's Sauce is a family enterprise,
our reputation and integrity is vital
to us. Therefore, we are committed to

the perfect "Jerk Sauce" and

Grandpa Eddie's Sauce is actually more
than five sauces in a single Jar. It is
a Barbeque Sauce and a Marinade, a Wet-rub,
a Hot Sauce, a Cocktail Dip and Steak
Sauce. Great in stews, soups, rice, scrambled
eggs, stir fries, tossed in salads and
dipped with fresh Granny apples.
